Duration: (10 months) whole day class
480 hours in 12 weeks in CA I, II & III

Schedule: Monday- Friday | 8am-4pm

The International Culinary Arts Program is a unique and innovative culinary program specifically designed to prepare graduates for the international culinary workplace. The DACA 10 month Culinary Program is taught as: Culinary Arts I, Culinary Arts II, and Culinary Arts III. The program uses International Educational Standards as well as the Dual Education System from Germany and International culinary techniques both highly effective learning methods.

This program allows students to acquire hands-on competency in Culinary Arts, Kitchen Management, HACCP and Nutritional Education. It is recognized by the Philippine government program – TESDA, (Technical Education and Skills Development Authority) and designed to respond to the country’s priority program in education and training.

Graduates of the program have the option to immediately join entry level positions in areas of the local or international culinary workforce industry upon completion of on the job training (OJT). This training is 500 hours in a minimum 4 Stars Hotel in Manila or Cebu. Our Partner Hotels are names like Shangri-La Makati, Sofitel,Marco Polo etc.

Culinary Arts I:

  • Kitchen Safety, Hygiene & Sanitization (HACCP)
  • Introduction to kitchen tools & equipment
  • Basic & Advanced knife skills
  • Introduction to F&B history & kitchen terminology
  • Introduction to basic cooking principles, cooking methods & basic food science
  • Introduction to basic ingredients
  • Introduction to kitchen & restaurant workflow
  • Preparation of Breakfast & egg cookery

Graduates of the first 3 month module “Culinary Arts I” will graduate with the Certificate of “APPRENTICE DE CUISINE”

Culinary Arts II:

  • Stocks, Soups & Sauces
  • Meat, Poultry, Seafood & Game
  • International Cuisine
  • Appetizers
  • Baking & Pastry
  • International Classic desserts

Graduates of the second 3 month module “Culinary Arts II” will graduate with the Certificate of “COMMIS DE CUISINE”

Culinary Arts III:

  • Kitchen Management & Organization
  • Introduction to stock control
  • Kitchen Mathematics
  • Buffet & Menu Planning
  • Introduction to Service
  • Introduction to Wine & Beverages
  • High standard Plating & Garnishing

Graduates of the third 3 month module “Culinary Arts III” will graduate with the Certificate of
